500gms fish (preferably Rohu or Catla)

2 medium-sized tomatoes, chopped

2-3 green chilies, slit

1 tbsp ginger-garlic paste

Salt to taste

Water as required

Method:


Heat the mustard oil in a pan over medium heat.


Add the ginger-garlic paste and fry for a minute.


Add the chopped tomatoes and green chilies, and cook until the tomatoes turn soft and mushy.


Add the turmeric powder and salt to taste.


Add water as required to create a gravy-like consistency.


Add the fish pieces and mix well.


Cover the pan and let it cook for 15-20 minutes or until the fish is cooked through.


Once done, turn off the heat and garnish with fresh coriander leaves.


Khar (Alkali Curry)

Ingredients:


2-3 tbsp banana tree ash (Kola Khar)

1 cup water

2-3 green chilies, slit

1 tbsp mustard oil

Salt to taste

Assorted vegetables (Papaya, bottle gourd, elephant apple, etc.)

Method:


Soak the banana tree ash in water overnight.


Strain the water and keep the extract aside.


Heat the mustard oil in a pan over medium heat.


Add the green chilies and fry for a minute.


Add the assorted vegetables and fry for 2-3 minutes.


Add the turmeric powder and salt to taste.


Add the banana tree ash extract and mix well.


Cover the pan and let it cook for 10-15 minutes or until the vegetables are cooked through.


Once done, turn off the heat and serve hot.


Pitha (Rice Cakes)


Pitha is a traditional dessert from Assam that is made using rice flour, coconut, and jaggery. It is usually served during festivals and special occasions.


Ingredients:


2 cups rice flour

1 cup grated coconut

1 cup jaggery, grated

Water as required

Method:


Mix the rice flour with water to make a soft dough.

Take a small portion of the dough and make a ball.

Flatten the ball and stuff it with grated coconut and jaggery.

Roll it into a ball again and flatten it into a disk shape.

Repeat the process with the remaining dough.

Steam the rice cakes in a steamer for 10-15 minutes or until they are cooked through.
